How to Make German Chocolate Cake

Step 1: Prepare the Chocolate Sponges

Sift together cake flour, cocoa powder, sugar, baking soda, and a pinch of salt in a large bowl. In a separate pitcher, whisk together buttermilk, melted butter, eggs, and vanilla extract. Pour the wet ingredients into the dry ingredients and whisk until a smooth batter forms. Divide evenly between two greased 8-inch round cake pans lined with parchment paper.

Step 2: Bake Until Fluffy

Bake at 175°C (350°F) for 28 to 32 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in their pans for 10 minutes before turning them out onto wire racks to cool completely.

Step 3: Cook the Coconut Pecan Custard

In a medium saucepan over medium heat, combine evaporated milk, granulated sugar, egg yolks, and unsalted butter. Stir constantly with a whisk for 10 to 12 minutes as the mixture thickens into a golden, glossy custard.

Step 4: Fold in Pecans and Coconut

Remove the saucepan from the heat and immediately stir in vanilla extract, sweetened shredded coconut, and chopped toasted pecans. Let the frosting cool completely to room temperature so it thickens into a spreadable consistency.

Step 5: Assemble the Cake

Place the first cooled cake layer on a serving platter. Spread half of the coconut pecan frosting evenly over the top. Place the second cake layer on top and spread the remaining frosting over the surface, leaving the sides exposed for a classic rustic bakery look.

Raya’s Secret Tips for Success

  • Cool the Frosting Completely: Ensure the coconut pecan custard reaches room temperature before assembling; warm frosting will slide right off the cake layers.
  • Don’t Over-Bake: Keep a close eye on the sponges during the final minutes of baking to retain maximum moisture in the crumb.
  • Whip Egg Whites: For an even lighter sponge structure, separate your eggs and fold whipped egg whites into the batter at the very end.

Frequently Asked Questions

Is German Chocolate Cake actually from Germany? No! It was invented in America by Samuel German, who created a sweet baking chocolate brand for Baker’s Chocolate Company in 1852.

Can I use sweetened condensed milk instead of evaporated milk? No, sweetened condensed milk contains added sugar and will make the frosting excessively sweet and sticky. Stick to evaporated milk for the correct custard consistency.

Why did my coconut pecan frosting fail to thicken? Make sure to cook the egg yolk and evaporated milk mixture over medium heat until it actively bubbles and coats the back of a spoon before adding the coconut and pecans.
